ESPRESSO EXTRACTION
Pull your shot aiming for a 1:2 ratio — 22g in, 44g out. Target an extraction time of 28–30 seconds for the ideal balance of sweetness and body. If your machine has PID temperature control, set your group boiler to 92°C.

SAN PEDRO ICED CHOCOLATE CHERRY LATTE

INGREDIENTS

Medium Roast Espresso — 22g in / 44g out
Milk — 180ml
Chocolate syrup — 10–15ml
Cherry syrup or juice — 10ml
Ice — full glass

METHOD
01 · EXTRACT

Pull a double espresso shot using 22g of coffee, yielding 44g out in 28–30 seconds. Let it cool slightly.

02 · BUILD

Fill a glass with ice. Add chocolate syrup and cherry syrup to the base.

03 · POUR

Add milk, then slowly pour the espresso over the top to create a layered effect.

04 · FINISH

Stir gently before drinking. Expect a creamy caramel body with a chocolate cherry twist.
